This delicious Chole dish is nutritious, warm and comforting. And best of all, it's quick and easy to make! Add this aromatic blend of spices, and enjoy as a side or an entree over rice.
Ingredients:
1 small onion, finely chopped (about 1 cup)
1 Tbsp ginger, peeled and finely chopped (about 2” ginger)
2 garlic cloves
2 Carrots, chopped
1/4 cup parsley, chopped
1 can of Garbanzo Beans (chickpeas)
1 Tbsp tomato paste
1 Roma (plum) tomato, rough chopped
2 Tbsp Chole Spice mix
Olive oil
Salt & pepper
1 cup of water
Parsley, chopped for garnish
Steps:
1. Start by preparing all your ingredients:- In bowl #1: add the chopped onion and ginger. Smash and roughly chop the garlic.
- Bowl #2: place the chopped carrots.
- Bowl #3: roughly chopped plum tomato.
2. Place a pan or a small pot on medium heat (size up if you’re doubling/tripling the recipe): add some olive oil to cover your pan, and sauté bowl #1 with the onion, ginger, and garlic. Make sure it’s not too hot so they don’t crisp or brown too fast.
3. Add salt and pepper, and cook until translucent, soft, a little crispy, and smells amazing - about 8 minutes.
4. Add the carrots, cook for a few minutes, then the garbanzo beans and cook another 2-3 minutes, and finely add the tomatoes.
5. Mix, add the tomato paste with 1 cup of water - stir and cook for another 2 minutes.
6. Add the Chole Spice and mix it all up. Lower the flame to low, and let slowly simmer uncovered to cook down for about 20 minutes until thick.
7. Taste for salt, if needed add gradually. If you find it too thick, adda bit of water, but taste again, you may need a bit more salt and/or spice mix when adding water.
Plate and top with some chopped parsley. Enjoy on its on, or over white rice.
