Roasted potatoes

Potayto Potahto is the ultimate roasted vegetable spice. Add it to your core ingredients (potatoes or any other veggie), roast, and get a perfect side to any meal.

Ingredients:

Potatoes OR mix of veggies (carrots, turnips, Kohlrabi)
Olive oil
3-4 cloves of garlic, minced
Salt
Potayto- Potahto spice mix

Steps:

1. Pre-heat your oven to 400º F (205º C)

Prepare your potatoes, red skin, yellow, fingerlings.
For small potatoes keep skin on, scrub well, and leave whole or cut in half. Bigger potatoes scrub or peel, and cut to chunks or 1/2 inch slices (the quickest).

  • If mixing other veggies, keep the potatoes on a separate try as they have different cooking time.

2. Place all potatoes (or other veggies) in a large bowl, add olive oil, the minced garlic, sprinkle salt and generously add the spice blend and mix throughly and all covered with delicious oily mix.

3. Place all in a baking pan (I like to cover with baking paper), making sure you have 1 layer and spread evenly. Taste the oil, and sprinkle additional salt and more spice mix as needed. (remember, potatoes like salt.)

4. Bake 20 minutes (put timer) and mix to make sure vegetables don't dry. Back for additional 15-20 until soft. before serving broil for 2-3 minutes to give and extra roasted color to the potatoes (be careful with other vegetables when broiling).
