Yemenite Red Lentil Soup

This Yemenite Red Lentil Soup recipe is by far one of our favorites!  The thick consistency, and the added Yemenite Hawaij Spice Blend makes it one of the healthiest and most comforting delicious winter go-to dishes.

The recipe is easy to follow, really quick! But make sure you check out our video, where we bring you a step-by-step guide on how to recreate this delicious flavorful soup that will warm your soul on a chilly day.

 

 

Ingredients:

1 onion
2-4 carrots
3-4 celery sticks
4 garlic cloves
2-3 potatoes
1.5 Tbsp Souper Spice (or any Hawaij soup mix)
2.5 tsp salt
Black pepper 2 cups red lentils, sorted and rinsed
** Optional: 1/4-1/2 tsp spicy paprika or Cayenne
8 cups vegetable broth (or water, or a mix of both)

Steps:

1- Chop the vegetables to small pieces, so they match nicely to the size of the lentils. Heat up a bit of olive oil in your pot, and sauté the vegetables for 10 minutes.

2- Add the spices to the vegetables: Souper Spice blend, salt, some black pepper, and your spicy paprika if you'd like some heat. Add your rinsed lentils, the 8 cups of broth (or water, or mix of both) and bring to boil.

3- Simmer for 30-40 minutes until the lentils are soft. If you're losing too much liquid, cover the pot mid simmering so it doesn't get too thick.

** Mid-cooking time is also a perfect opportunity to check and adjust your spices, mainly the salt.
